Gingerbread Waffles

Ingredients


  • 1 ¼ cups Earth Goods full-fat cow milk
  • ¼ cup melted Earth Goods coconut oil
  • ½ cup pumpkin puree
  • ¼ cup molasses
  • 2 tbsp Earth Goods brown flax seeds
  • 2 cups Earth Goods gluten-free all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp allspice
  • ½ tsp ground cloves
  • ¼ tsp Earth Goods salt
  • Optional topping: Earth Goods agave syrup

Directions

  1. Preheat the waffle maker to the desired temperature.
  2. Whisk together milk, coconut oil, pumpkin puree, molasses, and ground flax seeds in a bowl. Let the mixture sit for 5 minutes.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  4. Slowly combine the wet and dry ingredients, mixing until fully incorporated.
  5. Ladle the waffle mixture into the waffle maker, filling the bottom. Cook until firm and golden.
  6. Drizzle with agave syrup and top with fresh raspberries or your favorite fruits.
  7. Enjoy!
