Coconut Oatmeal Energy Balls
Fun Fact
Oh that savory yet energetic crush munch!
Ingredients
- 1¼ cups Earth Goods Premium Organic Oat Flakes
- ½ cup Earth Goods Organic Flaxseeds
- ½ cup Earth Goods Premium Organic Coconut Flakes
- ¼ cup semisweet chocolate chips (optional)
- ½ cup organic peanut butter (crunchy or smooth—to taste)
- ⅓ cup honey or Earth Goods Pure Organic Agave Syrup
- 1 tsp vanilla extract
- ¼ tsp Earth Goods Pure Atlantic Sea Salt
Directions
- In a large bowl, combine everything using a spatula. The mixture should come together into a sticky but slightly crumbly batter. If it’s too dry, add a bit more peanut butter and honey. If it’s too sticky, add a bit more oats.
- Sprinkle in semisweet chocolate chips (to taste).
- Cover the bowl and refrigerate for about 10 minutes to make the mixture easier to handle.
- Press and roll the batter into roughly 1-inch (≈2.5 cm) balls. You should be able to make 24 oatmeal energy balls.
- Sprinkle the extra coconut flakes over the balls.
- Enjoy immediately, and store any leftovers in a covered container in the refrigerator.
