
INGREDIENTS
• 1¼ cups Earth Goods Premium Organic Oat Flakes
• ½ cup Earth Goods Organic Flaxseeds
• ½ cup Earth Goods Premium Organic Coconut Flakes
• ¼ cup semisweet chocolate chips (optional)
• ½ cup organic peanut butter (crunchy or smooth—to taste)
• ⅓ cup honey or Earth Goods Pure Organic Agave Syrup
• 1 tsp vanilla extract
• ¼ tsp Earth Goods Pure Atlantic Sea Salt
DIRECTIONS
1. In a large bowl, combine everything using a spatula. The mixture should come together into a sticky but slightly crumbly batter. If it’s too dry, add a bit more peanut butter and honey. If it’s too sticky, add a bit more oats.
2. Sprinkle in semisweet chocolate chips (to taste).
3. Cover the bowl and refrigerate for about 10 minutes to make the mixture easier to handle.
4. Press and roll the batter into roughly 1-inch (≈2.5 cm) balls. You should be able to make 24 oatmeal energy balls.
5. Sprinkle the extra coconut flakes over the balls.
6. Enjoy immediately, and store any leftovers in a covered container in the refrigerator.
