
INGREDIENTS
Salad:
• 2 cups Earth Goods Exclusive Organic Red Lentils (or get creative and mix 3 colors to make the salad visually appealing)
• 2 tomatoes, diced
• Your favorite selection of mixed greens: spinach, rocket leaves, parsley, mint
• 1 onion, diced
Dressing:
• ¼ tsp. black pepper
• ¼ tsp. Earth Goods Pure Atlantic Sea Salt
• Lime juice
• 1 tsp. Earth Goods Organic High Oleic Sunflower Oil
• 1 garlic clove, minced
• 2 tbsp. Earth Goods Chia Seeds (to be sprinkled on top of the salad)
DIRECTIONS
1. Soak the lentils overnight. Place them in a pan with lightly salted water and bring to a boil until al-dente (firm).
2. Drain the lentils when they’re done and leave them aside to cool.
3. In a salad bowl, combine all the veggies together and pour half the dressing and toss.
4. Add the lentils and the rest of the dressing and mix together.
5. Sprinkle with chia seeds and bon appétit!
