Ingredients:
  • Half Tbsp. of Earth Goods High Oleic Sunflower Oil
  • 1 Onion, chopped
  • 200g. baby carrots
  • 1 leek, sliced
  • 2 celery sticks, sliced
  • 400g of Earth Goods chopped tomatoes
  • 2-3 tbsp. of Earth Goods Passata Tradizionale or Basil
  • 1 tsp cayenne pepper
  • 125g mushroom sliced
  • 375g of Earth Goods Penne Pasta
  • Salt & pepper
  • Basil leaves, to garnish
Directions:
  • Heat the oil in a saucepan. Add the onion and sautéed over low heat for 3-5 min, until soft.
  • Stir in the carrots, leek and celery, then the chopped tomatoes, tomato Passata, cayenne pepper and mushrooms.
  • Add a pinch of salt and simmer for 10 min.
  • Meanwhile, cook the penne in salted boiling water until al dente. Drain the pasta and sprinkle with pepper.
  • Top each portion of penne pasta with ¾ cup sauce and about 1 tablespoon of parmesan cheese and some basil leaves
