Ingredients:
- Half Tbsp. of Earth Goods High Oleic Sunflower Oil
- 1 Onion, chopped
- 200g. baby carrots
- 1 leek, sliced
- 2 celery sticks, sliced
- 400g of Earth Goods chopped tomatoes
- 2-3 tbsp. of Earth Goods Passata Tradizionale or Basil
- 1 tsp cayenne pepper
- 125g mushroom sliced
- 375g of Earth Goods Penne Pasta
- Salt & pepper
- Basil leaves, to garnish
Directions:
- Heat the oil in a saucepan. Add the onion and sautéed over low heat for 3-5 min, until soft.
- Stir in the carrots, leek and celery, then the chopped tomatoes, tomato Passata, cayenne pepper and mushrooms.
- Add a pinch of salt and simmer for 10 min.
- Meanwhile, cook the penne in salted boiling water until al dente. Drain the pasta and sprinkle with pepper.
- Top each portion of penne pasta with ¾ cup sauce and about 1 tablespoon of parmesan cheese and some basil leaves
