Muesli Parfaits

Recent studies have shown that consuming whole grains on a daily basis may lower the risk of abdominal fat deposition, heart disease and certain cancers such as colon, breast and prostate cancer. Whole grains include brown rice, muesli, millet, oats, quinoa, wholegrain bread and more. Did you know? A serving of white bread contains the same amount of calories as a serving of multigrain bread; however, the beneficial properties of whole grains outweigh the refined grains because they are lower in saturated fat and higher in fiber, vitamins, minerals and antioxidants.

  • ¼ cup of unsalted Earth Goods raw almonds
  • 1 cup low fat plain yoghurt
  • 1 cup low fat milk
  • 1-2 tbsp. of Earth Goods raw honey
  • 1 cup of Earth Goods rolled oats
  • ¼ tsp vanilla extract
  • 2 cups mixed berries, fresh or frozen
  • Toast the nuts in a dry pan for 3 minutes. Chop them coarsely and set aside
  • In a bowl stir together the yoghurt, milk, honey, oats and vanilla
  • Divide the oat mixture evenly among 4 small dishes or parfait glasses
  • Top each with a half a cup of berries, then 1 tbsp of almonds
  • Cover tightly and refrigerate overnight
