Mixed Vegetable Omelet
Eggs are a great option for Suhoor. They are nutritious on their own but also a great addition to baked food and sauces. They are a great way to stay full for longer and at the same time they taste delicious. Consuming 1 to 2 eggs per day is part of a nutritionally balanced diet.

Ingredients:
- 2 Earth Goods Organic Eggs, scrambled
- 1 Tbsp. of sliced onions
- 1 Tbsp. of colored peppers, julienned
- 1 Tbsp. of fresh spinach leaves
- 1 Tbsp. of squash, julienned
- 1 Tbsp. of fresh sliced mushrooms
- 2 Tsp of Earth Goods Extra Virgin Olive Oil
- Pinch of Salt, Black Pepper and Turmeric powder
Directions:
- Heat the oil in a frying pan over medium heat
- Add the vegetables
- Sauté with salt, pepper and turmeric
- Add the scrambled eggs and the spinach leaves
- Leave on medium heat for two minutes
- Transfer the mix to an oven and keep for 3 minutes on broil
- To make it more attractive and appeal to your little ones, you can bake them in a muffin tray into different shapes
