Ingredients:
  • 2 Earth Goods Organic Eggs, scrambled
  • 1 Tbsp. of sliced onions
  • 1 Tbsp. of colored peppers, julienned
  • 1 Tbsp. of fresh spinach leaves
  • 1 Tbsp. of squash, julienned
  • 1 Tbsp. of fresh sliced mushrooms
  • 2 Tsp of Earth Goods Extra Virgin Olive Oil
  • Pinch of Salt, Black Pepper and Turmeric powder
Directions:
  • Heat the oil in a frying pan over medium heat
  • Add the vegetables
  • Sauté with salt, pepper and turmeric
  • Add the scrambled eggs and the spinach leaves
  • Leave on medium heat for two minutes
  • Transfer the mix to an oven and keep for 3 minutes on broil
  • To make it more attractive and appeal to your little ones, you can bake them in a muffin tray into different shapes
