
INGREDIENTS
• ½ cup Earth Goods Royal Organic Tricolor Quinoa
• ¼ cup Earth Goods Superior Extra Virgin Avocado Oil
• ¾ cup water
• ½ a red cabbage, chopped
• 1 small red onion, chopped
• ½ avocado, peeled and sliced
• ½ lemon, cut into wedges (for garnish)
• 2 medium radishes, peeled and chopped
• ¼ cup fresh mint & parsley
• ½ a cucumber, chopped
• A handful of cherry tomatoe
• A handful of green peas
• A handful of pomegranate seeds
• A handful of black & white sesame seeds
• 1 ¼ tsp soy sauce (optional)
DIRECTIONS
1. Bring the quinoa and water to a boil in a saucepan over high heat.
2. Reduce the heat to medium-low, cover, and simmer until the quinoa is tender and the water has been absorbed, about 15 to 20 minutes.
3. In a shallow bowl, arrange the vegetables.
4. Drizzle the oil and soy sauce over the vegetables. Add the almonds on top, and you’re all done!
