Organic Rice Pilaf

As a side or a main dish, you can have it as often as you wish!

Prep: 30 - 40 minutes (or 50 min. if you’re using brown rice)

INGREDIENTS

• 1 cup Earth Goods Organic White Rice (or brown rice, but it takes longer to cook—choose based on your prep time)

• 2 cups vegetable stock

• 2 tbsp Earth Goods Superior Organic Sunflower Oil

• 1 small sweet onion, finely chopped

• 2 cups thinly sliced carrots

• ¼ tsp Earth Goods Pure Atlantic Sea Salt

• ⅓ cup chopped celery leaves

• ½ tsp dried thyme

DIRECTIONS

1. Preheat a large pan over medium heat.

2. Add oil and sauté the onions, carrots, and celery leaves for 4 minutes, or until the onions start to soften.

3. Push the vegetable mixture to the side of the pan and add the rice. Sauté for about 3 minutes, stirring frequently, until the rice starts to turn slightly brown.

4. Add the stock, salt, and thyme to the pan. Stir and bring to a boil.

5. Reduce the heat to a gentle simmer, cover with a lid, and let it cook for 15 minutes.

6. Turn off the heat and let it sit for 10 more minutes.

7.  Remove the lid and fluff the rice with a fork. Meal is served!
