
There’s a new definition of satisfying with these gluten-free, sugar-free, and dairy-free pancakes—absolutely delicious, low in calories, and packed with the perfect balance of protein and fiber to kickstart your day! If you can eat all nine pancakes by yourself, they’re all yours!
INGREDIENTS
• 1 cup Earth Goods Organic Gluten-Free Rolled Oats
• 1 cup egg whites (approximately 2 eggs)
• 2 mashed bananas
• ¼ cup walnuts
• 1 cup Earth Goods Organic Coconut Flakes
• A pinch of salt
• ¼ cup Earth Goods Organic Agave Syrup
• ½ tsp cinnamon
• 1 tbsp organic coconut oil (optional)
• Chopped bananas or mixed fruits for garnish
• Mixed nuts (walnuts, cashews, almonds, chia seeds) (optional)
DIRECTIONS
1. Combine banana, egg whites, oat flakes, cinnamon, baking powder, and salt in a blender. Blend until you have a smooth, thick batter.
2. Stir in walnuts or any other add-ins you like, such as fruits, almonds, or mixed seeds and nuts.
3. Heat a large nonstick skillet over medium heat and lightly coat it with coconut oil.
4. Pour the pancake batter into the pan to form small to medium-sized pancakes. Cook for 2 minutes, or until small bubbles form on the surface. Flip and cook for another 2 minutes, or until golden brown and cooked through.
5. Repeat until you’ve used all the batter—you should end up with about 9 pancakes.
