
INGREDIENTS
• 2 Earth Goods Organic Eggs, scrambled
• 1 tbsp sliced onions
• 1 tbsp colored peppers, julienned
• 1 tbsp fresh spinach leaves
• 1 tbsp squash, julienned
• 1 tbsp fresh sliced mushrooms
• 2 tsp Earth Goods Coconut Oil
• Pinch of salt, black pepper, and turmeric powder
DIRECTIONS
1. Heat the oil in a frying pan over medium heat and add the vegetables.
2. Sauté with salt, pepper, and turmeric. Then, add the scrambled eggs and spinach leaves.
3. Cook on medium heat for two minutes.
4. Transfer the mixture to an oven and broil for 3 minutes.
Tip: To make it more appealing to your little ones, bake the mixture in a muffin tray to create fun shapes.
