
INGREDIENTS
• 2 cups lentils
• 5 large carrots, cubed
• 3 tomatoes, cubed
• Fresh chopped parsley or coriander (optional)
• 2 tbsp Earth Goods High Oleic Sunflower Oil
• A handful of Earth Goods Organic Pumpkin Seeds
• A pinch of Earth Goods Pure Atlantic Sea Salt
• Pepper (optional)
• Sliced cucumber (optional)
• ½ lemon, squeezed
DIRECTIONS
1. Soak the lentils overnight. Place them in a pan, bring to a boil, and cook until al dente (firm).
2. In a medium-sized bowl, mix together the olive oil, lemon juice, salt, pepper, and fresh chopped parsley and coriander.
3. Add the cubed carrots, tomatoes, and lentils to the dressing. Toss to combine.
4. Transfer to a serving dish and sprinkle pumpkin seeds on top.
