
INGREDIENTS
Dry Ingredients:
• 1 cup oat flakes (blended into flour) or Earth Goods oat flour
• ½ cup unsweetened Earth Goods cocoa powder
• 1 tsp baking powder
• ½ tsp Earth Goods salt
Wet Ingredients:
• ½ cup melted Earth Goods coconut oil
• ½ cup Earth Goods coconut sugar
• 2 large Earth Goods brown eggs
• 1 tsp peppermint extract (for baking)
• ½ cup dark chocolate chips
Optional for Rolling the Cookies:
• ⅓ cup icing sugar
DIRECTIONS
1. Blend rolled oats into oat flour and measure one cup into a bowl.
2. Mix oat flour, cocoa powder, baking powder, and salt in a medium-sized bowl.
3. In a small bowl, combine coconut sugar, melted coconut oil, eggs, and peppermint extract.
4. Pour wet ingredients into dry ingredients, stir until fully incorporated. Add chocolate chips and chill the dough for 30–45 minutes.
5. Preheat oven to 350°F and line two baking sheets with parchment paper.
6. Roll 1½ tbsp cookie dough balls, optionally roll in powdered icing sugar for a "crinkle" effect.
7. Place 6 cookies on each sheet and bake for 8–10 minutes.
8. Allow cookies to cool completely before enjoying!
