Chocolate Peppermint Crinkle Cookies

Ingredients
Dry Ingredients:
- 1 cup oat flakes (blended into flour) or Earth Goods oat flour
- ½ cup unsweetened Earth Goods cocoa powder
- 1 tsp baking powder
- ½ tsp Earth Goods salt
Wet Ingredients:
- ½ cup melted Earth Goods coconut oil
- ½ cup Earth Goods coconut sugar
- 2 large Earth Goods brown eggs
- 1 tsp peppermint extract (for baking)
- ½ cup dark chocolate chips
Optional for Rolling the Cookies:
- ⅓ cup icing sugar
Directions
- Blend rolled oats into oat flour and measure one cup into a bowl.
- Mix oat flour, cocoa powder, baking powder, and salt in a medium-sized bowl.
- In a small bowl, combine coconut sugar, melted coconut oil, eggs, and peppermint extract.
- Pour wet ingredients into dry ingredients, stir until fully incorporated. Add chocolate chips and chill the dough for 30–45 minutes.
- Preheat oven to 350°F and line two baking sheets with parchment paper.
- Roll 1½ tbsp cookie dough balls, optionally roll in powdered icing sugar for a "crinkle" effect.
- Place 6 cookies on each sheet and bake for 8–10 minutes.
- Allow cookies to cool completely before enjoying!
