
INGREDIENTS
For Chicken:
• 1 kg organic skinless chicken breast, cut into large cubes
• 2 onions, thinly sliced
• 2 garlic cloves, minced
• 2 tsp Earth Goods coconut oil
• 1 can Earth Goods organic Italian chopped tomatoes
• 1 tsp fresh ginger, grated
• 1 green chili, finely chopped
• 2 tsp turmeric powder
• 1 tsp ground coriander
• 1 tsp ground cumin
• 1 tsp paprika
• 1 tsp curry powder
• 1 tsp ground cinnamon
• Salt and pepper to taste
For Rice:
• 1 cup Earth Goods organic brown rice, boiled with a pinch of salt
• 2 cups fresh coriander, chopped
• 2 cups fresh mint leaves
• 1 cup fresh lemon, thinly sliced
• 1 tsp saffron, soaked in ½ cup rose water
DIRECTIONS
1. In a cooking pot, heat the oil. Cook the onions and garlic until golden. Add ginger, chili, turmeric, coriander, cumin, paprika, curry powder, and cinnamon. Stir in the tomatoes, then add the chicken cubes with a pinch of salt and pepper. Cook until the chicken is fully cooked.
2. In a large cooking pot, add two cups of chicken stock. Layer with boiled rice, then spread coriander, mint, and lemon slices on top. Sprinkle with saffron rose water.

3. Repeat the layering process until all the boiled rice and ingredients are used.
4. Reduce the heat to low and cook the rice for another 15 minutes.
5. To serve, flip the cooking pot onto a large tray and decorate with fresh herbs on top.
