
INGREDIENTS
• 1 cup Earth Goods Cashew Butter
• ½ cup Earth Goods Coconut Sugar
• 1 large Earth Goods Brown Egg
• ½ cup Earth Goods All-Purpose Gluten-Free Flour
• ¼ tsp Earth Goods Salt
• 1 tsp vanilla extract
DIRECTIONS
1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, use an electric mixer to combine the cashew butter and coconut sugar for about 1 minute.
3. Add the egg and vanilla extract. Mix on low speed until fully combined.
4. Add the flour and salt. Mix until a soft dough forms.
5. Scoop slightly rounded tbsps of dough, roll into balls, and press with a fork to create a criss-cross pattern.
5. Bake for 7–9 minutes. Let the cookies cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
